I just discovered the best chicken tortilla soup I’ve ever had. Chicken tortilla soup is good for the soul. It has a mouth-watering aromatics. I’m a die-hard Chuey’s tortilla soup lover. If you’ve never had the tortilla soup at Chuey’s, you are missing out. Before I stumbled onto Sweet Basil’s recipe, I thought I was never going to find anything to top Chuey’s. After making Sweet Basil’s chicken tortilla soup for the first time; I found that it tasted better and was healthier.

The Ingredients and recipe were taken directly from Sweet Basil’s Blog. I am just sharing my thoughts to the recipe and how much I enjoyed it.

First, the ingredients to Chicken Tortilla Soup.

1 Tablespoon Olive Oil

1 Large Carrot, peeled and chopped

1/2 Onion, chopped

1 Celery Stalk, chopped

1 Red Bell Pepper, Chopped

1 1/2 Teaspoons Garlic Powder

3 Teaspoons Taco Seasoning

2 Roma Tomatoes quartered

1 15 ounces Can Fire Roasted Diced Tomatoes, Drained

1 Can Fire Roasted Diced Green Chiles, drained

2 Ounces Monterey Jack Cheese, or 1/3 Cup Mexican Shredded Cheese

1 Can Black Beans, drained and divided

1/2 Avocado (I used a whole because I topped the soup with the second half)

10 Tortilla Chips (I love X tortilla chips from Costco)

2 Cups Chicken Broth

2 Cups Water

3 Chicken Breasts, cooked and shredded (I know Sweet Basil cooked and shredded her chicken; I bought a rotisserie chicken at Publix and pulled off the meat. You can even buy a rotisserie chicken at Costco already cleaned off the bones.

1 1/2-2 Cups Corn (I used a can of corn)

1 1/2 Teaspoons Kosher Salt

1/4 Cup Chopped Cilantro
